Coconut Sugar Drop Cookies
Ingredients
⅔ cup shortening
¾ cup all natural coconut sugar
1 tsp vanilla
1 egg
4 tsp milk
¼ tsp salt
1½ cup flour
1½ tsp baking powder
Directions
Preheat oven to 375°F
Cream shortening, coconut sugar and vanilla in a mixer
Add egg and beat until fluffy
Stir in milk
In a separate bowl, sift flour, baking powder and salt
Blend dry ingredients into wet mixture
Chill dough at least one hour
Drop dough by the teaspoon full on pan lined with parchment paper
Flatten lightly with fork
Bake at 375 for 10-12 minutes
Yields 48 cookies
